This salt is then dissolved in water and treated with potassium iodide and sodium nitrite. The resultant mixture undergoes a series of reactions to produce 2-bromocinnamic acid, including the addition of molybdenum as a catalyst. The reaction also produces byproducts that are removed by extraction or distillation. Finally, it undergoes a chromophore change from yellow to red in the presence of air due to oxidation by atmospheric oxygen.
