Chitinase is a proteolytic enzyme that hydrolyzes chitin, a major component of the cell walls of fungi and some invertebrates. It is a member of the glycosyl hydrolases family and is classified as an endochitinase. Chitinase has been shown to have dextran sulfate-binding activity in vitro. The optimum concentration for chitinase is at 100-200 U/mL. Chitinase has been shown to inhibit the development of bowel disease in wild-type mice by reducing the levels of proinflammatory cytokines such as TNF-α. This enzyme also has antiatherosclerotic properties, which may be due to its ability to decrease lipid accumulation in macrophages and smooth muscle cells.
