Description

1-Caffeoylquinic acid is a procyanidin that has been shown to inhibit acetylcholinesterase, the enzyme responsible for the breakdown of acetylcholine. This inhibition leads to an increase in acetylcholine levels and subsequent activation of nicotinic receptors, which are associated with increased cognitive function. 1-Caffeoylquinic acid has also been shown to have many other biological properties including anti-oxidant activities, matrix effect on enzymes, and the ability to prevent hepatic steatosis. 1-Caffeoylquinic acid is found in Chinese herbs and can be extracted from them using an acetate extraction process. The analytical method used for this extraction can be determined by examining its surface methodology.
