1,3-Diolein is a fatty acid with an acyl chain of 15 carbons. It is a common component of the human diet and it can be found in many foods. 1,3-Diolein has been shown to stimulate enzyme activities in ventricular myocardium and to promote the synthesis and release of human proteins. The chemical structure of 1,3-diolein consists mainly of a hydroxyl group with an activated carbon bond at one end and an ester bond at the other end. This compound also undergoes transfer reactions that result in its formation from dietary linoleic acid or arachidonic acid.
