Erucic acid methyl ester is a fatty acid that is found in the seeds of plants such as rapeseed and mustard. It can be synthesized from myristic acid or, more commonly, from methyl myristate. This compound is used in pharmaceutical preparations such as cationic surfactants and biodiesel. The reaction solution includes metathesis reactions with sodium citrate, which produces a surface methodology that has been shown to have anti-inflammatory properties. Erucic acid methyl ester also has a hydroxyl group on one end of its molecule and a fatty acid on the other. This fatty acid is composed of an even number of carbon atoms with at least one double bond between two carbons. Erucic acid methyl ester is chemically classified as an unsaturated fatty acid because it has at least one double bond between two carbons in its fatty acid chain.
