Description:Ethyl maltol is a fatty acid that has been shown to possess pharmacokinetic properties. It is produced by the reaction of sodium citrate and picolinic acid, which are both inorganic compounds. The hydroxyl group on ethyl maltol reacts with hydrogen peroxide in the presence of an oxidizing agent such as potassium ferricyanide or manganese dioxide to produce chemiluminescence. This process can be used for wastewater treatment. Ethyl maltol also reacts with caproic acid and angelicae dahuricae to produce redox potentials that are similar to those found in human serum.
