Ethyl gallate is a phenolic compound that can be found in the leaves of plants such as cranberries, apples, and tea. It has been shown to have anti-inflammatory properties and is currently being studied for its potential use in the treatment of bowel disease. Ethyl gallate has also been shown to inhibit certain enzymes involved in drug metabolism, which may lead to drug interactions. This natural compound has an analytical method that relies on preparative high-performance liquid chromatography (HPLC) and a phase transition temperature at around -5°C. Ethyl gallate is bioactive and possesses antioxidant properties, as well as being able to scavenge free radicals. This compound has been shown to inhibit cancer cell growth by blocking the conversion of p-hydroxybenzoic acid into benzoquinone.
