Description:

H-Glu-bNA is a synthetic peptide that has been shown to have aminopeptidase activity. H-Glu-bNA has been used as a marker for the presence of proteolytic bacteria in milk and cheese products. The enzyme hydrolyzes peptides at the carboxyl terminal end of amino acids, releasing them from protein molecules. It is also used to study the action of proteases on casein, which are enzymes that break down the proteins found in milk. The enzyme can be assayed in vitro using lactococci or other bacterial cells. This product is not intended for use as an antibiotic or antimicrobial agent and should not be taken internally.
