5-Hydroxyanthranilic acid is a metabolite of 3-hydroxyanthranilic acid. It is an on-line process in which sodium carbonate reacts with a mixture of 5-hydroxyanthranilic acid and 3-hydroxyanthranilic acid to produce the disulfide bond. This compound has been shown to have hypoglycemic effects, which may be due to its ability to inhibit the activity of alpha-glucosidase. The carcinogenic potential of 5-hydroxyanthranilic acid has not been determined yet, but it has been shown to cause neuronal death in rats. The mechanism by which this happens is still unknown but kinetic studies have shown that it can bind to the red cell membrane and affect the transport of glucose across it.
