5-Hydroxy-7-methoxyisoflavone is a metabolite of biochanin A that has been found to be an inhibitor of nitrosation. It was first isolated from the roots of Flavescens pratense and its structure was determined by gas chromatography, mass spectrometry and nuclear magnetic resonance (NMR) spectroscopy. 5-Hydroxy-7-methoxyisoflavone is a yellow solid with a melting point of 160°C. The compound has been shown to inhibit nitrosation reactions in vitro by reacting with the nitrogen atom on the N-hydroxysuccinimide, forming an alkylating agent that does not react with the amine group of the substrate. 5-Hydroxy-7-methoxyisoflavone also inhibits enzymatic activity in vitro at a concentration as low as 0.05 mM and may have potential for use in preventing nitrosamine formation in vivo
