Invertase is a glycosidase that catalyzes the hydrolysis of sucrose to its component sugars, glucose and fructose. It is used in many food products as a low-calorie sweetener. Invertases are found in plants, bacteria, and yeast. The enzyme can be purified from different sources or produced by recombinant DNA technology. Invertases from different sources have different biochemical properties. For example, some can tolerate higher concentrations of alcohol than others or are more active at lower pH levels. These differences may affect the performance of the enzyme in specific industrial processes such as ethanol production or wine making. Invertases from different sources also have varying sensitivities to inhibitory proteins such as alpha-amylase inhibitors and protease inhibitors.br>br>The most common form of invertase is wild type (WT) which has an optimum pH range between 4 and 7 and works best at temperatures below 40 degrees Celsius.br>br> A
