5-Methylfurfural is an organic compound that is produced from the dehydration of fructose or sucrose. It can be used as an analytical method for 5-hydroxymethylfurfural (5-HMF). The matrix effect on the reaction mechanism and surface methodology are important factors when analyzing 5-HMF. Oxidation catalysts, such as palladium on carbon, can be used to produce 5-HMF. Methanol solvent is often used in the extraction process. A solid phase microextraction method has been shown to be effective in the analysis of 5-HMF. Structural analysis provides data on conformational properties and thermodynamic data. Malonic acid has been identified as a potential product of a proposed reaction mechanism involving 5-HMF and oxygen. Infectious diseases may also be studied with this compound because it shows anti-microbial activity against methicillin resistant Staphylococcus aureus (MRSA) and Mycob
