Description:

3-Mercapto-2-methylpenta-1-ol is a chiral, homologous compound that is used in food chemistry. It reacts with glutathione and enantioselectively reacts with other thiols. 3-Mercapto-2-methylpenta-1-ol has been shown to be stable isotopically, which makes it useful for the determination of molecular weight. The odorant receptor TRPA1 has been found to be maximally activated by 3-Mercapto-2-methylpenta-1-ol, which makes this compound an effective odorant for use in natural products and human diseases.
