Methyl oleate is a fatty acid with a hydroxyl group at the methyl end. It is used as a catalyst in the reaction of phosphorus pentoxide and fatty acids. The optimum concentration of methyl oleate is 2.5-3%. Methyl oleate has been shown to react with hydrogenated fatty acids and produce an organic acid, which can be used for surface methodology. This type of reaction mechanism is called hydrolysis. The reaction solution must be degassed to remove air entrainment for this process to work properly. Methyl myristate and other unsaturated fatty acids are also produced in this reaction. Analysis of these products using IR spectroscopy, nuclear magnetic resonance (NMR) spectroscopy, and X-ray crystallography has revealed that they have similar structures but different functional groups.
