Octanal is an aldehyde that has been shown to act as a receptor for infectious diseases. It was also found to be a potent inhibitor of the glycol ethers, which are used in various industrial applications. Octanal can be used as an antioxidant and has been shown to inhibit the oxidation of vitamin E. The octanal molecule is structurally similar to other natural compounds, such as 2-nonenal and 3-octanol, which have been shown to have antiviral activity in vitro. A method for the determination of octanal in foods has been developed by using solid phase microextraction (SPME) coupled with gas chromatography-mass spectrometry (GC-MS). This method is sensitive, specific, and reproducible.
