Pz-Pro-Leu-OH is produced by subtilisin, which is expressed in Escherichia coli. The amount of this enzyme can be monitored and optimized by cloning. Thermolysin, another protease, also cleaves proteins at the peptide bond and has been used to measure the activity of Pz-Pro-Leu-OH.
