Phytate 1-phosphatase is an enzyme that dephosphorylates phytate, a phosphorus storage compound found in plants. Phytase activity can be assessed by measuring the amount of inorganic phosphate released from phytate with increasing pH. The wild-type strain of this enzyme has been shown to have a high level of activity at pH 7.0. The biochemical properties of this protein are similar to other enzymes that have signal peptides and polymerase chains, but the molecular weight is smaller than those enzymes.
