Carboxypeptidase P is a proteolytic enzyme that hydrolyzes peptides in the amino acid chain at the carboxyl terminus of the protein. It has been found to be active against Candida glabrata and has a pH optimum of 8.5. The enzyme is found in various animal tissues, including the pancreas, where it catalyzes the conversion of procarboxypeptidases into carboxypeptidases. Carboxypeptidase P is also involved in fatty acid metabolism and has been detected in epidermal growth factor (EGF) and basic fibroblast growth factor (bFGF). This enzyme also exhibits kinetic properties, which have been extensively studied through analytical chemistry methods such as high-performance liquid chromatography (HPLC).
