Phosphoenolpyruvate monosodium salt hydrate (PEPPS) is an enzyme that converts phosphoenolpyruvic acid to pyruvate. It is a metalloenzyme that contains a metal ion, usually zinc or manganese, which binds to the phosphate group of phosphoenolpyruvic acid. PEPPS has been shown to be involved in the shikimate pathway, which is essential for the synthesis of aromatic amino acids such as phenylalanine and tyrosine. PEPPS catalyzes the reaction by breaking the phosphodiester bond between two phosphate groups and forming a new phosphate bond with sulfoxide and amide. This enzyme is resistant to sulfoxides but not phosphor compounds. The enzymatic activity of PEPPS can be detected through fluorescence emission from shikimic acid.
