Ascorbic acid is the most commonly occurring form of vitamin C. It is a water-soluble vitamin that acts as an antioxidant, protecting against oxidative damage to cells. This process also protects against oxidation of other molecules by removing reactive oxygen species such as anion radical scavenging.
