Description:

Saccharin is a non-nutritive sweetener that is used in food and beverages. It has been shown to have physiological effects, such as reducing locomotor activity in mice and increasing the absorption of benzoic acid. Saccharin also has an optimum concentration range of 0.01-0.1%, which can be determined by measuring the AUC (area under the curve) for saccharin in vitro or ex vivo. Saccharin is chemically stable at high pH levels, but not at low pH levels, so it should not be stored with foods that are acidic. The AUC for saccharin can be measured using analytical methods such as electrochemical impedance spectroscopy or chemical stability tests such as long-term toxicity tests.
