Sodium erythorbate hydrate is a white crystalline solid that belongs to the class of organic compounds known as fatty acids. It is used in biological treatment to reduce malic acid and copper complex. The active methylene group in sodium erythorbate hydrate is connected to an alkylthio group, which makes it able to form hydrogen bonds with other molecules. Sodium erythorbate also has a hydrogen bond with anhydrous sodium, which helps it stay stable and prevents decomposition. Sodium erythorbate can be used for wastewater treatment because of its ability to react with active oxygen, forming the corresponding alcohol and oxidizing agent. The intramolecular hydrogen bond between the methylene group and hydroxyl group stabilizes the molecule by reducing its tendency to break down into two separate molecules.
