This inhibition may be due to trimethyl citrate's ability to form hydrogen bonds with the hydroxyl group on s-phenylmercapturic acid. Trimethyl citrate also inhibits hydrochloric acid-induced skin cell death by forming intramolecular hydrogen bonds with the hydroxyl group on hydrochloric acid molecules.
