Vitamin E is a fat-soluble vitamin that has antioxidant properties. It is found in vegetable oils and some leafy vegetables, but humans must also consume it as a supplement or in fortified foods because the body cannot produce it. Vitamin E is essential for the normal function of cells, especially those involved in immune responses and nerve conduction. This vitamin prevents oxidation of other molecules within the cell, which can lead to damage to the DNA and cell membranes. Vitamin E may be toxic at high levels, so toxicity studies have been conducted on maternal blood samples from pregnant women who were exposed to different concentrations of alpha-tocopherol. Results indicated that optimum concentrations are between 5 and 15 milligrams per day for pregnant women.
METHODS: The most common analytical method for measuring vitamin E content is high performance liquid chromatography (HPLC). HPLC can measure alpha-tocopherol content by separating it from other compounds based on its chemical properties. This method is preferred over spectrophot
