Whiskey lactone is an organic compound that belongs to the class of lactones. This sample preparation technique employs a solution of sodium hydroxide that acts as an extractant. The hydroxide solution reacts with the acidic ph of the sample, which causes hydrolysis and esterification of the fatty acid chains in the sample. The reaction is accompanied by a color change from yellow to blue. Whiskey lactone has been shown to have high values for eugenol and chemical structures such as isovaleric acid and hydroxyl group.
