Curcumin, the major curcuminoid found in the rhizomes of Curcuma longa, is a diarylheptanoid that has been shown to have anti-inflammatory properties. Curcumin is metabolized to 1-(3,4-dihydroxyphenyl)-7-(4-hydroxyphenyl)hept-6-en-3-ol (curcuminol) and then to 1-(3,4-dihydroxybenzyl)-7-(4-hydroxybenzyl)heptane (obtusifolin), which are both metabolites with anti-inflammatory activity. Curcuminoids inhibit the production of proinflammatory cytokines such as TNFα, IL1β, and IL6 by blocking the action of transcription factors such as NFκB.
