Lipase is an enzyme that catalyzes the hydrolysis of fats to fatty acids and glycerol. The enzyme can be activated by the addition of a co-factor, such as calcium ion or zinc ion. Lipase has been purified from Pseudomonas sp. and purified lipase preparations have been shown to possess high activity in the presence of hydrophobic substrates. Lipases are usually measured by turbidimetry, but electron microscopic assays are also used for determining the amount of lipase in a sample. The surface methodology technique is used to study the adsorption properties of lipases on various surfaces, with high concentrations needed for this type of assay.
