Erucic acid ethyl ester is an isomerizing agent that converts the double bonds of unsaturated fatty acids to their trans form. It is used as a catalyst in the production of cholesteryl oleate, which is used in animal feed. Erucic acid ethyl ester has been shown to be effective in the surface methodology for analysis of fatty acids and triglycerides on animal surfaces. The hydroxy group on the ethyl ester forms a complex with the fatty acid, which allows it to be easily removed by alkaline hydrolysis. Erucic acid ethyl ester also has an effect on dietary fat intake and can interfere with iodination reactions in animals.BR>
