Cellulose catalase is an enzyme that catalyzes the decomposition of hydrogen peroxide and the degradation of organic compounds. It is stabilized by inorganic materials such as polyvinyl and has a high activity in an acid environment. The catalytic mechanism is based on a hydrogen abstraction from the substrate with simultaneous oxidation of the active site COOH group to CO2. Catalase has been shown to have a binding affinity for carbohydrates and can be used in biocatalysis, stabilization, and thermophilic applications.
