It also has been shown to decrease the dry weight of rats fed a high-fat diet. This compound also is an intermediate in the formation of 5-hydroxymethylfurfural, which is produced during the Maillard reaction between sugars and amino acids. 3-Deoxygalactosone binds to proteins, forming hydrogen bonds with amino acid side chains and affecting their biological function.
