2-Ethyl-3,6-dimethylpyrazine is a chemical with a fatty acid and an aromatic ring that reacts with acidic ph to produce isovaleric acid, ethyl decanoate, and malic acid. The inhibitory effect of 2-Ethyl-3,6-dimethylpyrazine on the reaction has been studied in a model system. In this system, 2-Ethyl-3,6-dimethylpyrazine inhibited the reaction due to its ability to chemically react with the acidic ph. Solid phase microextraction was used to extract the 3 compounds from the model system by reacting 2-Ethyl-3,6-dimethylpyrazine with acidic ph. The optimum concentration of 2-Ethyl-3,6-dimethylpyrazine for inhibition of the reaction was determined to be 0.1%.
