Mogroside IIA1 is a natural sweetener that can be extracted from the fructus of Glycyrrhiza uralensis. It has been shown to inhibit the production of glucose in the liver and stimulate insulin release by pancreatic β-cells, which may lead to improved glycemic control in type 2 diabetes. Mogroside IIA1 also has anti-inflammatory properties and can soothe sore throats. Mogroside IIA1 is a structural formula of mogrosides, which are compounds found in Glycyrrhiza uralensis. The mogrosides are composed of fructose molecules linked together by α-D-glucopyranoside bonds. This process occurs naturally during the biosynthesis of mogrosides and is carried out by recombinant cells. Mogrosides have been shown to produce volatile oils and bitter substances when heated, although these substances do not contribute to the sweetness of Mogroside IIA1.
