Mogroside III is a natural compound that has been used as a hypoglycemic agent. It is an inhibitor of alpha-glucosidase, the enzyme responsible for breaking down carbohydrates in the small intestine. Mogroside III also exhibits inhibitory properties against various glycosyltransferases, including glucose-6-phosphate dehydrogenase and maltose-6-phosphate isomerase. This may be due to its ability to serve as a competitive inhibitor of glucose and maltose binding. In addition, mogroside III inhibits histone deacetylases (HDACs), which are enzymes that remove acetyl groups from lysine residues on histones and other proteins. This inhibition results in increased gene expression by blocking the removal of acetylated lysine residues from DNA.
