Rebaudioside I is a sweetener that is synthesized from steviol glycosides in the leaves of Stevia rebaudiana. It is a high-purity product with no known impurities. The biosynthesis of Rebaudioside I occurs through many steps, including conversion of steviol glycosides to steviol, conversion to rebaudiosides A and B, and conversion to Rebaudioside I. Rebaudioside I has been shown to have a sweetness profile similar to sucrose, but it does not promote tooth decay or cause gastrointestinal distress. It is heat stable and can be used as a sugar substitute in many food applications.
