The biosynthesis of Rebaudioside I occurs through many steps, including conversion of steviol glycosides to steviol, conversion to rebaudiosides A and B, and conversion to Rebaudioside I. Rebaudioside I has been shown to have a sweetness profile similar to sucrose, but it does not promote tooth decay or cause gastrointestinal distress. It is heat stable and can be used as a sugar substitute in many food applications.

Rebaudioside I was discovered by scientists at the Institute for Biological Research (IBR) in Tokyo, Japan. They found that the enzyme preparations from Saccharomyces cerevisiae strain were able to convert steviol glycosides into Rebaudioside I with high purity and yield
