Zymosan is prepared from the cell walls of baker’s yeast (Saccharomyces cerevisiae) and consists of polysaccharide chains of various molecular weights, containing approximately 73% polysaccharide, 15% protein, 7% lipid and other inorganic components. When injected into animals, it induces inflammation and has been used for many years in inflammation and immunology research. The literature on Zymosan reveals few rigorous analytical studies on the detailed structure of this macromolecule due to the wide variation in extraction procedures reported. A hypothetical structure of the carbohydrate part of the molecule is shown below constructed from the available literature. This shows a β1,3 glucan chain with β1,6 branch points.
