Beta-casomorphin-5 (BCM-5) is a peptide that is released from the digestion of casein in milk. It is an analog of casomorphin-7, which has been shown to have opioid activity. BCM-5 has been found to inhibit the proliferation of cells and induce apoptosis by binding to P21, a protein that controls the cell cycle. BCM-5 also binds to the mu-opioid receptor and inhibits gastric acid secretion. The conformational properties of BCM-5 have been determined with analytical methods such as LC/MS/MS, NMR, and FTIR. These studies have shown that BCM-5 adopts a ß-sheet conformation when bound to mucin glycoprotein or other proteins.
