Endoproteinase Glu-C is a protein that is encoded by the gene of the same name. It belongs to a family of proteolytic enzymes that cleave proteins at cysteine residues. The enzyme has been studied extensively as a model system for protein folding, and its three-dimensional structure has been determined using x-ray diffraction data and computer modeling. Endoproteinase Glu-C has inhibitory properties against both endoproteinase activity and proteolysis in human serum. The enzyme's activity is inhibited when it undergoes phase transition from an acidic to a basic state, which occurs at a temperature of approximately 60 degrees Celsius.
