Furyl hydroxymethyl ketone is an organic compound that is an intermediate in the production of sorbose, an aldohexose. In this process, it is produced by the reaction of trifluoroacetic acid and ethyl esters of sorbic acid. This reaction is exothermic and proceeds through a chloride-catalyzed dehydration mechanism. The 5-hydroxymethylfurfural (5-hmf) is the other major product from this reaction. It has been shown to have antiradical activity and to be able to inhibit the formation of furan dioxides.
