In this process, it is produced by the reaction of trifluoroacetic acid and ethyl esters of sorbic acid. This reaction is exothermic and proceeds through a chloride-catalyzed dehydration mechanism. The 5-hydroxymethylfurfural (5-hmf) is the other major product from this reaction. It has been shown to have antiradical activity and to be able to inhibit the formation of furan dioxides.
