Description:

Z-Gly-Phe is a peptide that inhibits protein synthesis by binding to the reactive site of a pancreatic enzyme. This site is normally occupied by a hydrogen bond and the compound binds to it by occupying this space, resulting in the inhibition of enzyme activity. Z-Gly-Phe has been shown to inhibit insulin-stimulated glucose uptake in rats, which may be due to its ability to bind with sodium carbonate. The binding constants of Z-Gly-Phe and its inhibitors have been determined using an analytical method that measures changes in pH. The optimum pH for Z-Gly-Phe is 8.5, which corresponds with the optimal pH for human pancreatic enzymes.
