Neotame is a sweetener that has been approved for use in the United States. It is used as a sugar substitute and has properties similar to aspartame, but with improved sweetness. Neotame is a hydrogenated form of aspartame and contains about 8000 times the sweetness of sugar. The molecule is composed of two amino acids, phenylalanine and aspartic acid, which are bonded together by dehydration synthesis to form a dipeptide ester. Neotame can be found in dry powder or crystalline form and can be mixed with water to create a liquid sweetener. Neotame’s stability at high temperatures makes it an excellent choice for cooking and baking.
