Allicin is a compound that can be extracted from the root of Allium sativum, or garlic. It has been shown to inhibit the activity of various enzymes in vitro. Allicin acts by binding to the enzyme's active site and preventing it from catalyzing its reaction. This process leads to bacterial cell death via a caspase-independent pathway. Allicin has been shown to be effective against oral pathogens such as Streptococcus mutans and Lactobacillus acidophilus, but not against gram-negative species such as Escherichia coli and Pseudomonas aeruginosa. The optimum concentration for allicin is between 0.1 and 1 μM, with a rate constant of 3×10 cm/s. Allicin also shows synergistic effects when combined with antibiotics such as ampicillin, erythromycin, or clindamycin.END>
