12-O-Methylcarnosic acid is a fatty acid that has been shown to have antioxidant properties. It is produced from the acetate extract of the fruit of the 12-o-methylcarnosic acid tree, which grows in Brazil. The chemical reactions that produce 12-O-Methylcarnosic acid are catalyzed by enzymes such as cytochrome p450 and glutathione reductase. In vitro studies have shown that 12-O-Methylcarnosic acid inhibits collagen production by lung fibroblasts and insulin resistance by liver cells. This compound also has been shown to inhibit fatty acid synthesis in mice, which may be due to its ability to inhibit the enzyme acetyl coenzyme A carboxylase (ACC).
