Octyl gallate is a naturally occurring compound that belongs to the class of gallates. It is a non-toxic, water-soluble antioxidant that has been used as a preservative in foods and pharmaceuticals. Octyl gallate has been shown to inhibit nuclear DNA synthesis by binding to the dinucleotide phosphate (NDP) site on ribonucleotide reductase, thereby preventing the formation of deoxyribonucleotide triphosphates. A rate constant for this reaction has been determined using analytical methods.
