The compound has been shown to inhibit the phosphotungstic acid catalyzed hydrogenation of unsaturated fatty acids with a low melting point. 2-Ethyl-1-hexanol inhibits mitochondrial membrane potential by binding to the hydroxyl group in the fatty acid and forming a hydrogen bond interaction. 2-Ethyl-1-hexanol also has toxic effects on animals, which may be due to its ability to induce symptoms such as vomiting, diarrhea, and central nervous system depression. These effects are thought to be due to its strong interactions with hydroxyl groups in fatty acids.br>br> 2-Ethyl hexanol can reduce the viscosity of oils and fats at high temperatures, which makes it an effective "solid" catalyst for processes that require thermal expansion.
