N-Cbz-L-glutamic acid can also be used as a template molecule for the synthesis of monomers and polymers with various functional groups. This compound has a high molecular weight, which makes it suitable for use as a stabilizer in foods and cosmetics. It has been shown that this polymer has an inhibitory effect on lipase, which can be beneficial in preventing lipid oxidation and rancidity of food products.
