The HT-2 toxin is used as an analytical method to determine the concentration of this toxin in food, and as a research tool for studying the effects of toxins on cell membrane potential. HT-2 Toxin binds to the mitochondria of cells and causes a loss in mitochondrial membrane potential, which leads to cell death. The HT-2 toxin has been shown to be inhibitory at doses below those that would lead to full lethality. It is also highly sensitive to glycosidic bonds, which are found in many foods, such as malonic acid and zearalenone. These two compounds have been shown to be inhibitors of glycosidase enzymes, which may play a role in the detoxification process.
