It has been shown to inhibit the growth of bacteria, viruses, fungi, and parasites. Benzoic acid inhibits the enzyme activity of bacterial catalase and peroxidase. Benzoic acid binds to bacterial DNA with high affinity and is able to penetrate the cell membrane. The antimicrobial activity of benzoic acid is dependent on its concentration.
