:Natamycin
Description:
Natamycin, also known as pimaricin, is a polyene macrolide antibiotic primarily used as a natural preservative in food and as an antifungal agent in various applications. It is produced by the fermentation of certain Streptomyces species. Natamycin is characterized by its ability to inhibit the growth of a wide range of fungi and yeasts, making it particularly effective in preventing spoilage in dairy products, meats, and baked goods. The compound works by binding to sterols in the fungal cell membrane, disrupting membrane integrity and leading to cell death. Natamycin is generally recognized as safe (GRAS) for use in food, and its efficacy is enhanced by its low solubility in water, which allows for prolonged action. In addition to its food preservation applications, natamycin is also utilized in pharmaceuticals, particularly in treating fungal infections in humans and animals. Its chemical structure features a large lactone ring and multiple conjugated double bonds, contributing to its biological activity and stability under various conditions.
